DARIK NEWS: A WORKSHOP FOR EASTERN HUMMUS SALAD OPENS TODAY

The first workshop in Bulgaria for production of eastern “hummus” salad was officially opened today in the village of Gorna Rositsa. The paste consists of boiled chickpeas, roasted sesame tahini, olive oil, lemon juice, and sunflower oil. “This is a very healthy product, entirely plant-based”, explained the owner of the company “Hummus Bulgaria” Minka Andreeva. She first tasted the dish in Israel, where she worked at that time. Seeing that everyone in the Eastern world was using it, and that its popularity was growing in Western countries, the owner of “Hummus Bulgaria” decided to produce it in her home country.

“There were many vicissitudes that I went through until I decided to do it, the risk is huge,” Andreeva said. The production machines are custom made by a Bulgarian company, the products are also native – chickpeas are from the Burgas region and tahini is from the Harmanli region. The hummus can be found in major grocery stores – Metro, CBA, Familex, as well as in dietary chains in Sofia, Plovdiv, and Varna. From mid-January, it can also be found in Billa stores. The workshop was consecrated by His Eminence the Bishop of Veliko Tarnovo Gregory. The opening was attended by the Regional Governor Marian Kostadinov, businessmen and friends of Minka Andreeva. – Text and photos: DARIK
